Roasted Asparagus

What is better than asparagus roasted in the oven? If you are not sure how to roast asparagus to perfection, look no further! Asparagus are now in season so now is the time to enjoy this fresh produce!

Ingredients

  • 1 bunch asparagus
  • 2 tbsp olive oil
  • salt and pepper to taste

Toppings

  • lemon, grated parmesan cheese, roasted pepper spice optional

Instructions

  1. Heat oven to 425 degrees F. Add a parchment paper to a baking sheet. Cut off the woody ends of the asparagus and discard them. Arrange the asparagus onto the baking sheet. Drizzle with olive oil and sprinkle with parmesan cheese, roasted pepper spice, salt and pepper.

  2. Bake for 12-15 minutes, depending on the size of the asparagus (note: the asparagus in the pictures were baked for 12 minutes). 

  3. Squeeze lemon juice and serve.
